After a tough past few years, due to drought, bushfires and floods, truffle growers across the Southern Highlands and Tablelands are looking forward to a more productive season.
Pat Maroney from Robertson Truffles said recent weather conditions have been ideal.
“They need some great summer sun, rain but not too much, aswell as some really cold winter temperatures and frost to really bring out that aroma,

“And over the last few days in Robertson, we’ve had some snow and frost,”Mr. Maroney said.
That’s in contrast to last season where there was three and a half metres of rain and the product was sitting in soggy soil.
